Once again, Happy Australia Day! Genki Husband and I celebrated in our little Virginia home this past weekend but I wanted to give you all a recap of what we did to celebrate our family’s culture in Australia. We had the privilege to visit the find country this last year and couldn’t have been more thrilled to celebrate January 26th for we knew what it meant to be in Australia. It’s funny how one goes to a country and instantly becomes one with that country – or is that just us traveling at heart kinda people? Either way, we love our Australia family and friends and wouldn’t think of missing out on this holiday with them in spirit.
Thank you so much to our Aussie Family for sending us this care package to celebrate Christmas and Australia Day! Love it all! You spoil us so much – but we are secretly very thankful and blessed to have you all in our lives.
Homemade pikelets are a traditional breakfast in Australia. Here’s my take on how to make them the almost traditional way. (But Vegan!) And yes, that is Australia jam from a farmers market we attended, vegemite and poppers from Australia! How did those get through the mail?
Australia Day 2014 Vegan meal: BBQ (in the snow) vegan hot dogs/sausages, ezekiel toast with vegemite and avocado, salad with dressing, and traditional smashed potato.
For Dinner we had some delicious homemade healthier sausage rolls – vegan. Check out genki kitty site for recipe.
For Dessert: Homemade Lamington Cupcakes in cupcake liners and flags that I purchased in Australia while there a few months ago. Genki Husband’s colleagues are going to love these!
