Happy Australia Day!  This morning I took to make a traditional Australian breakfast called Pikelets.  Our Amazingly talented Aussie Mum made these for us while in Australia this last year so this Australia Day I decided to recreate it- vegan of course.

1c flour
1 c unsweetened Almond milk
1 tbsp sugar
2 tsp chiaseeds (or flaxseeds)
zest & juice of 1 lemon
1 tsp vanilla extract
1 tsp baking powder

Simple is the key to Australian cooking.  Simply spray oil your frying pan (or use vegan butter) and plop some batter on top in a circle.  Do not press down at all!  These should be nice and plump.  Flip when starting to dry out on top and fry the other side.  Easy right!  Serve with jam and vegan butter.  If you want to be like an Australian, skip the fork and go for the fingers.
