Some of you have been wondering what recipe I used for my Vegan Chocolate Chip Oatmeal cookies the other day. If you ever want a recipe or now my secret to making any recipe featured on my daily blogs, please let me know and I will write it up to share with all of you. If one person questions, I will answer since each and every one of you are important to me. I’m so thankful we can share recipes and tips to making our lives healthy and a bit easier.
My favorite chocolate chip recipe (with flour) comes from Alien’s Day Out (Please go visit her website, she is an amazing blogger in South Korea) that owns a cute vegan restaurant called PLANT in Itaewon, Seoul. Mipa (the blog owner) writes about her daily adventures in Seoul and her restaurant. She also has some wonderful recipes that are simple and inexpensive to put together without tarnishing the taste of the traditional recipe from which hers are inspired. Can you tell I’m a big fan? So on to the recipe (which I don’t follow exactly but who does right?): Original Recipe
1 c unbleached flour 1 c oatmeal (Just don’t use 1 minute instant wonder oats) 2 tsp baking powder 1/2 tsp salt 2 tsp cinnamon 3/4 c vegan chocolate chips 3/4 c light brown sugar 1/2 c canola oil (or ½ c applesauce or 1 banana) 1 tsp vanilla 1/2 c water 1. Preheat oven to 350F/175C. 2. Mix all ingredients together in a large bowl. 3. Add chocolate chips, mix well. 4. Use two spoons to scoop out normal sized cookies just like normal onto a prepared cookie sheet. 5. Bake for 10-15 minutes. Cool or just eat and complain they are hot… (That’s what we do at least…ha-ha)
