Avocado Toast Idea Vegan

Today I am blogging from California, however as I was looking through my photos from our previous home in Indiana, I found these last few bits leftover.  Instead of tossing them out, I thought I would share them with you just in case you were searching for some easy, nothing-is-left-in-the-kitchen type of meal ideas.  Our movers came 3 days before Christmas so there was hardly anything left in the kitchen, besides odds and ends that either were to be moved in boxes to California or those that were to be finished off before our departure.  Food should never be wasted, as it is a privilege to be blessed with food in the kitchen, so this is what we came up with to satisfy our hunger.

Apple Pie Crumble Oatmeal for breakfast

Apple Pie Crumble Oatmeal for breakfast is the perfect little added extra during the holidays.  Decadent I know!  This was original plain oatmeal topped with some leftover apple pie crumble with a diced apple.

Grapefruit Juice

Grapefruit juice in the morning is a great way to get in more fruit while not feeling overly full from the fiber.

Sometimes to make life a bit more simple, preparation is in order.  This is just the case with this breakfast, which we ate a few times before our movers actually packed up our belongings.  A month before our move, I made a ton of different muffins, pancakes, waffles and scones to get us through the last few weeks before we moved.  We had one week in Michigan with our family so I wanted to make sure we had enough to last without having to take over the kitchen too much.  I love to take these baked items and freeze them for later.  It is amazing how just making a full batch of a baked item can provide for the future mornings.  A few muffins here and there will be a pleasant present in the future.

Vegan Breakfast Scramble

Vegan Breakfast Scramble¬†is super easy and filled with protein and minerals from the vegetables. ¬†In our household we had leftover bell peppers so that is what we tossed into this breakfast dish. ¬†You can add just about any vegetable you want and it tastes great! ¬†We added homemade bread and a grapefruit from Florida, even though it’s a Texas red.

Leftover tofu scramble ideaOne pkg of tofu will normally provide 4 servings of tofu scramble.  Leftover tofu scramble can be made into burritos for breakfast the next day. Add some hot sauce and/or salsa and you have a spicy meal on the go.

Vegan Fry-up Aussie Style and/or British style

Vegan Fry-up Aussie Style and/or British style is something Genki Husband asks for quite often when he is more active. I’m not sure I would serve this (unless he really wanted it) on a down day but when we are active, this meal keeps us going for hours! It has vegan tofu scramble with spinach, roasted tomatoes, roasted potatoes and an English Muffin. ¬†It sounds like a lot of work but¬†making it vegan takes a lot of the waiting time for the foods to cook thoroughly through.

Vegan leftover what’s in the kitchen un-fried rice. ¬†Un-fried rice is something we adore in our household, not only for the homey flavors but also seeing as it helps clear out the miscellaneous vegetables in our kitchen.

Leftover Meal Recreation Ideas Vegan This is what happens when you are moving and there are a million small things but not a full meal. ¬†We actually ate at Mucho Mas¬†in La Porte just a few days earlier and some vegan burritos were leftover. ¬†The tortilla was soggy but the inside ‘guts’ were still just as good as the first day. ¬†No one wants to have soggy tortillas, so I tossed out the old and used new. ¬†Ta-dah, a new meal recreated from leftovers.

Haitian Pumpkin Soup Recipe

Haitian Pumpkin Soup is a recipe I found on Whole Foods Market website and wanted to test it out since I have never had Haitian food (at least not to my knowledge).  We found this smelled good but it had a taste unlike something we had tested before, it was sweet and spicy.  Our tastebuds were not ready for it just yet, but I thought I would share it with others that might be looking for this recipe that want to make it untraditionally vegan.

So that is the end of our photos for now from Indiana.  It was a strange collection but hopefully you enjoyed them.  Next photos coming up shall be our trip traveling by car across the entire USA.
