We’ve all seen the recipes on popular magazines and magazines boasting of a detox recipe that will change your life. Most of the time, these recipes consist of a broth with a few pieces of vegetables. While this may be fine for some, I usually want more than just 100 calories since I’m a grown adult and need more than that for a meal. While this does have enough calories for a full meal for an adult, children can eat this too. It contains seaweed but if you’re not normally a fan, do not fear it is not a main attraction and you will notice it as much.
Vegan Vegetable Pasta with Seaweed Soup Recipe
1/2 – 1 cup pasta (I used corn pasta)
2 cups frozen mixed vegetables (I used Trader Joe’s soy’catash which has edamame)
4 tbsp dried hijiki (Japanese seaweed)*
1/2 cup dried wakame, cut (Japanese seaweed)*
2 celery stalks, sliced
2 carrots, sliced
1/4 c onion, coarsely chopped
4 cloves garlic, sliced or minced
4 cups vegan broth (I used vegan Better than Bouillon Beef-less)
Toss everything together in a medium-sized soup pot and give a good stir until everything is mixed. Bring to a boil over high-heat. Once boiling, you can either turn to a simmer for about 10 minutes or you can boil for about 3-5 minutes and then turn off the heat and cover. Let the soup sit in the pot without heat for about 5-10 minutes or until the pasta is al dente. This saves electricity making it better for the environment. Trust me, it works! Enjoy!
*Note: Buy seaweed from an Asian store if possible instead of a health store to reduce the cost by more than half normally. This is a method to save money while eating vegan.
