Vegan sausages on the grill is something Genki Husband loves at least once a week in the warmer months. When it’s cooler he switches to his favorite meal of Hungarian Stew, which contains his favorite vegan sausages. Sometimes we make our own sausages but for 90% of the rest of the time we buy Tofurky Italian Sausages. There are other sausages but this brand and type is sold for the best price around our area. Eating vegan does not have to be expensive, one just has to be selective and balance out the options to fit a budget.
Sometimes I think the hardest part of making dinner is making it completely balanced. There are times I am rather lazy, I’m not going to lie, but most of the time I have one main feature such as vegan sausages and then toss some other ingredients together to make equality among the nutrients.
3. Chips (splurge this week) Note: make sure there is no milk in the ingredients list
4. Homemade Vegan Salad (Per Bowl)
1/4 avocado (optional because the sausages already have high fat content)
2 small Campari tomatoes, quartered
1/8 Sliced Cucumber, or diced
1/2 head romaine lettuce, coarsely chopped
Instructions: Toss it all together and drizzle with homemade vegan ranch.
Besides grilling the vegan sausages, that’s all you really have to do to have a balance vegan dinner. You can substitute the side dishes for whatever you prefer but this is what we had in the fridge. Sometimes we will grill sliced sweet potato on the grill too but we didn’t have any in the kitchen. Just work with what you have and no worries.
