Apple Cider Waffles Vegan Recipe

Skip the Apple Cider Donuts, there are going to change your Autumn forever!  There are a ton of recipes on the internet (we have tried a ton), but none have really been so amazing we were wanting to make them again.  It was until I made this recipe inspired by the Thug Kitchen’s Cookbook recipe for Spiced Apple Waffles (which oddly enough we have not tried yet).  Everything else in the cookbook was delicious so I am sure the original recipe is just as good.

To create this recipe I changed a few things up so please do not think I am giving you Thug Kitchen‘s original recipe.  Nope, you will have to get that amazing cookbook yourself.  Which, by the way, you definitely should seeing as it will change the way you make a lot of things in your kitchen.

2 c apple cider (ours was unpasteurized)*
2 ½ c all-purpose flour
1 tbsp baking powder
¼ tsp salt
2 tsp cinnamon, ground
1 tsp ginger, ground
1 c apple, finely diced (You can shred but I don’t have a shredder)
2 tbsp brown sugar
2 tbsp of oil
  1.  Mix all the ingredients together in a large bowl.
  2. Place in waffle iron, according to instructions.
  3. Place on your plate and enjoy!

*You could also use apple juice and add 1 tsp apple cider vinegar to give it that tangy taste too.  But, first option would be apple cider since it works great this time of year if you can find it in your store or at your farmers’ market.

**You won’t believe how much apple cider flavor comes out in these waffles.  Freeze individually for future usage.  You can place these frozen in a toaster oven and/or toaster just like the ones you purchase at the store.
