Our household has been turned upside down this last week, working almost 20 hour days for 5 days straight. Just after a few hours of sleep a night, we are too tired to make a full meal. That means easy meals are definitely necessary to have around. This week I decided to make Overnight Oats but with two twists: make them with steel cut oats and also make it chai! The inspiration came from the website This Homemade Life, a new website I came across while looking through Pinterest. I wanted to make something new because Genki Husband gets tired of having the same thing over and over again. If you follow me on Instagram, you know I love to have the same thing repeatedly. I get in ruts, nothing wrong with that right? So I make this recipe with the original in mind for dietary purposes.
So it may not be the prettiest but it’s healthy and tastes great!
Overnight Steel Cut Chai Oats Recipe
makes 2 servings
1 c steel-cut oats
1 c unsweetened almond milk
2 tbsp ground flaxseed
1/4 tsp cardamon*
1 tsp cinnamon*
1 1/2 tsp vanilla extract
1/4 tsp ground ginger*
1 tbsp agave nectar, light
Optional Toppings: Mixed Nuts, Peanut Butter, Coconut Shreds, Chocolate Chips, More Cinnamon, the options are unlimited
Place all the ingredients in a large, sealable container and place in the fridge for at least 24 hours. You can also use regular, rolled oats which will take less time. We prefer to have steel cut oats when possible for nutritional values.
*Note: Instead of using these spices you can also use pumpkin spice.
The result was better than we thought it would turn out to be. Not only were the steel cut oats soft but still a bit chewy (like preparing it on the stove) but the chai was a nice alternative to what we normally make with just vanilla and cinnamon. So if you are looking for something a bit different then go ahead and make these Chai Steel Cut Oats overnight.
