Vegan Tofu Scramble RecipeBreakfast is the most important meal of the day, especially to those that are trying to lose weight or maintain it.  8+ hours of sleep can be a long duration between nourishing the body with food.  So when you wake up in the morning, it’s essential to feed the body with nutrients that will keep you going for hours.  In our household we love to have tofu since it is 10 grams of protein per 1/2 cup.  If you mix a protein with a carbohydrate in the morning, your body will be well fueled for a very productive day. See how I make vegan mock eggs called tofu scramble.  It’s so easy you won’t believe it!

Since Genki Husband and I have very active lives, whether it be running, gym strength training or just a general work day, we love to add a good amount of carbs and proteins.  This is especially important on strength training days since these two are essential for recovery but also to give the body energy for the full day.

Serves 2-4 (usually 2 in our household)

1 pkg tofu, extra firm

2 tsp garlic powder

2 tsp onion powder

2 tsp nutritional yeast

1/2-1 tsp turmeric, ground

1/2- 1 tsp cumin, ground (gives an egg flavor)

2 tsp soy sauce

Pepper to taste

1. Lightly spray a frying pan with olive oil.

2.  Crumble the full package of tofu into the pan and saute until slightly browned on all sides. I like to use my hands but if you don’t like the texture you can dice it up with a knife and it will work the same.

3.  When the tofu is lightly browned but not dry, Turn off the heat.  Add the rest of the ingredients and mix well.

4.  Serve hot!

We love to add different types of carbs with this tofu scramble.  Our favorite is homemade bread or vegan approved English Muffins.  I love Vegemite for the B Vitamins but Genki Husband loves either peanut butter or homemade chia seed jam.  It all depends on our mood.
