Vegan Menu and Recipe November

Let it snow, let it snow, let it snow…  Yes it happen early this year, it snowed!  When Mother Earth has something in mind, boy does she do a terrific job.  Not only did we get cooler temperatures but we received around 6 inches of snow.  Sounds bad but I am sure there are plenty other people wishing there was only 6 inches.  Additionally the temperatures have plummeted and it has been around 0 to 30F/-18 to -1C.  This type of snowy weather is not on my favorite list since it is too cold to run outside and seeing as we do not have a gym in our area, we are forced to not run at all.  This is the harsh facts of life when living in a small town in the middle of Michigan.  Thankfully we did get a good workout the other day shoveling our driveway and two of our neighbors.  Sometimes we have to learn to let go of our traditional workout plans and deal with what is right in front of us.  Exercise is all about learning to get active, not about the weight you lift, the miles you run daily or the hours you spent in a gym.  It all goes down to getting active and simmering the blood through your body for health.

Raspberry Almond Scones Recipe is something I whipped together since raspberries are still on sale this week. There is nothing like fresh fruit on sale in the cold months in Michigan. Vegan Breakfast Casserole Recipe spoke to me through the original photo.  My mother-in-law bakes her and her husband’s breakfast every morning so normally we can not use the oven.  But we finally found a break in the week when they were going to eat cereal so I decided it was time to test this recipe out. Genki Husband Potato Soup Recipe perfect for when you are sick or just want to warm up after being in the cold. Genki Husband made this years ago when I was sick one evening. He tossed the ingredients together (maybe with a little help from me) but it was so delicious he has made it year after year when it’s cold outside.  Sorry this recipe is made by Genki Husband so I can’t give you the recipe.

Vegan Creamy Broccoli Rice Recipe

Vegan Creamy Broccoli Rice is something we have become to love after making it the other day.  Yes, we made this again since we can not get enough of it.  We have to admit though, it is better fresh and not microwaved a few days later.  It works but it is just better fresh since the ‘cheese’ sauce gets soaked up by the rice.  It is still delicious either way though and perfect for cooler days. There’s not really a recipe for this but if you want one just let me know and I can write it up.  Simply take your favorite cheese recipe (mine is actually my macaroni and cheese recipe- minus the pasta), cooked rice and steamed broccoli and mix in a bowl.  Then add some baked tofu cubes or lightly sauteed tofu cubes in the same bowl.  Instant dinner!

Vegan Tofu with Kale Pot Pie Recipe – includes kale!  Pot pie is one of those casserole dishes that tends to be a comfort food to a lot of Americans.  It is a simple recipe to put together ahead of time and is setting in the fridge waiting to be cooked at any time of the day.  We tend to make ours ahead of time and freezer the entire thing so we have an instant meal waiting whenever we do not feel like cooking.  But considering we have little space in the refrigerator we made this on Sunday morning so it was waiting for us in the evening. Vegan Eggless Salad Recipe is something we eat quite often since it is simple to put together in 5 minutes or less, inexpensive and tastes so amazing!  It is an added plus that the salad can be as versatile as used on top of organic mixed greens salad, on bread or just out of a bowl.  We prefer to take this on a soft green bed of organic greens and eat together minus a dressing.Recipe will be available here on G.K. website on November

Vegan Tuna Salad Recipe is something I have heard about from many other vegans.  It is made from chickpeas which when you think about it doesn’t sound too good but oddly enough it really does a good job.  It is not 100% a tuna substitute in the taste department but it is really tasty. Fuyu Persimmon Fruit

Fuyu Persimmon Fruit from Japan.  My first experience with this fruit is when I lived in Japan.  The most famous Japanese variety is Kaki but the ones in the stores do not sell this type. Persimmons are hard to explain because it is sweet like a berry but has a texture like a tomato (only not as runny inside).  Simple wipe off the outside, remove the top leaves and enjoy like an apple.  Since I learned of this fruit from the Japanese, whom take all skins off everything that is eaten raw, I like to eat just the ‘meat’ of the fruit instead of the skin.  Both are edible though.

Raspberry Square Bars with a crumb topping is again something I wanted to make for the entire family since raspberries are on sale right now. This recipe has a few steps but other than having a lot of dirty dishes, it is easy to put together. You can make this with just about any fruit and I’m sure it will come out just as good. Chinese Flower Tea from Biggby Coffee Chinese Flower Tea from Biggby Coffee House in Michigan. This is actually Harney and Sons Company tea. This is a light tea that goes even softer in flavor when you purchase a large size. I’d suggest getting no larger than a 16oz with this hot tea.
