Vegan BLT Sandwich RecipeGenki Husband as many of you know used to love bacon.  I on the other hand am one of those people that never really cared for any meat product, so I’ve probably only had it a handful of times in my life.  This last week we purchased a box of pre-made vegan approved Lightlife bacon strips.  Actually the strips looked more like those dog treats “Beggin’ bacon strips” by Purina.  ( Do I know how to sell things or what? LOL)  There is no apparent smell, thank goodness.  Normally one package sells for around $3.69 in our area but since the product is perishable it does go on sale for less.  These pre-made items along with other vegan approved options are available in the produce section, normally near the tofu and salad.

Our first attempt was to serve these vegan bacon strips sauteed in a frying pan for a few minutes and served with tofu scramble for breakfast.  It was not a success, the strips were tasteless and really ruined the flavor of the scramble.  The rest of the package (serves 4), I put into making these sandwiches as a cold lunch special.  The result was very satisfying – much more than the warm version.  The texture was crunchy since I had sauteed them in a frying pan as before and then cooled.  Now I wouldn’t say the taste was exactly bacon but it did have a nice flavor cold.  My suggestion if you are lacking in time and want to test these out, make a sandwich and take it along for lunch.

To assemble 1 Vegan BLT:

1 vegan English Muffin (I used Meijer’s brand since it is accidentally vegan)
1/2 tbsp vegan Mayo (I used Just Mayo!)
2 lettuce leaves (all we had or I would have put a lot more)
2 slices fresh tomato
A few cracks of black pepper
Assemble the sandwich just as you would a normal BLT sandwich.
