Autumn Inspired Dishes Homemade Vegan Menu

Some weeks just happen to put a little more stress on a person than others, for me it was this last week.  Among other things (I won’t bore you with everything), my personal laptop decided it was tired and would only output the dreaded black screen with a fully functioning cursor to tease me.   So what every almost driven into insanity person would do after yelling a few times, I decided it was time to erase and re-install my operating system.  Thankfully I’m addicted to routine backups so everything was saved but it was just the annoyance of having to reinstall and start from scratch.  Then I remembered my backup software CD’s for my Microsoft Office are located in our storage unit in Virginia still, which we have no access to at this moment.  But when I look back at it, I think it’s just God’s way of stating my life needed a reboot to start from scratch once again to make things better in the long run.  So that meant some comfort food and easy to put together recipes were necessary for my sanity, what was left of it.  So on to the meal photo and recipes below:

Mexican Refried Bean Soup Recipe Vegan

Mexican Re-fried Bean Soup is something that our family absolutely loves. This takes about 10-20 minutes and makes around 6 servings! If that wasn’t a selling point alone, it is under 300 calories per serving. Not only is this healthy but it is simple, inexpensive and feeds a crowd.  Previously I made this recipe but it went into the crock-pot for hours, this is new recipe is the simplified version.  I highly suggest if you have the time and a food processor to make your own re-fried beans, the taste is unlike anything you have tasted from a can.  Recipe available here on G.K. on November 17, 2014.

Vegan BLT Sandwich

Five Guys Vegan Approved 'Burger'

This week we were incredibly busy with work and also some uni classes. So that meant we spoiled ourselves and went out for a hot lunch this last week at Five Guys Burger. Did you know you can order a Veggie Burger without the cheese? Basically there is no ‘burger patty’ available but you can purchase any toppings to put on the bun (that is supposed to be vegan approved). We do this and make sure to order mushrooms for protein. It’s a complete meal. It’s not the best meal but it is available in a lot of cities around the nation now. Sorry, this meal does not have a link since I was unable to get the nutritional facts for it. All the other recipes have nutrition facts though.

Vegan Gardein Fishless Filet Dinner with mixed steamed vegetables. This was a very simple meal under 250 calories. We additionally had some raw vegetables such as colored bell peppers with hummus and freshly cut fruit on the side. (not shown)  We have had this fish-less dinner before but as Fish ‘N Chips with my own Homemade Tartar Sauce.

Panera Bread Vegan Approved Sandwich

Panera Bread Veggie Sandwich which is supposed to be vegan. This is off the main menu but is listed as vegetarian. You have to ask for no cheese and for bread without cheese. We double checked with the cashier and also with the waitstaff that it was in fact free dairy, meat and cheese. It basically just contained a few pieces of lettuce, tomato, onion and cucumber. Then it also has some sort of pepper spread and about a ‘pea size’ amount of pesto and that’s all. We actually went here after our last sad visit but were once again saddened by the lack of choice. All of the soups are not vegan and most of the breads are not either. I’d have to suggest if this is the only restaurant go ahead and get a salad without all the meat and cheese. They charge you for the full meat/cheese price but at least you leave without the guilt.

Gardein Turk'y Cutlet Dinner Vegan

Turk’y Cutlet Dinner is so simple to make. See this link for directions – you won’t believe how simple it is! Then you just steam some corn and make some mashed potatoes. Done! Note: We add kale to our mashed potatoes to get some extra greens into our diet.

Chocolate-Dipped Coconut Crispy Bars (Marshmallow-Free). Who doesn’t love Rice Crispy Squares? These are an alternative and Genki Husband states they remind him of the American Almond Joy candy bars. Recipe available here on G.K. on November 13, 2014.

Avocado Chocolate Chip Cookie Recipe Vegan

Avocado Chocolate Chip Cookie Recipe. Hello, green cookies?  Who doesn’t want these delicious green cookies for a holiday celebration?  The cookies are not only baked with an avocado but turn out to be soft and fluffy inside.  Delicious!  No one will know there is a healthy fat instead of normal oil. Tetley’s Tea! Love this dark British Blend, inexpensive tea for days that just call for a cuppa.  Does anyone else see the heart in the tea?
