Colors are popping up over night and one can definitely tell it’s the changing of the seasons right before our eyes.  Leaves are changing to a multitude of oranges, reds and yellow hues and late autumn harvest produce is filling the farmers’ markets in Michigan.  When this occurs, consumers fall into stores, restaurants and so on to indulge in pumpkin and apple flavored items.  This year seems to be more so than others with everything coming out pumpkin spice.  So I figured it was time for some Blog Loving here on Genki Kitty: Pumpkin and Apple Inspired.

Apple Pumpkin Pie Oatmeal Muffins from Meals Full of Color on the Simply Love Food Website. These looks exciting don’t they?

Apple and Raisin Stuffed Acorn Squash from Savings Lifestyle Website. I make something similar to this but with quinoa- this would be a wonderful healthy option for dessert.  Remember to use non-dairy vegan butter or oil.

Ginger Apple Pumpkin Soup from the Love and Lemons website. We make something similar to this but without the coconut milk. I think this would be a wonderful flavor contrasting soup that is slightly spicy which can warm the body in the cooler days of fall.

Pumpkin Chili anyone? You can easily convert this recipe from Babble by substituting with vegan meatless crumbles (or homemade crumbles) instead of beef and vegetable broth instead of beef broth. Easy!

Maple Pumpkin Blondies for the sweet tooth from the Desserts with Benefits website. Easy to convert to vegan by using non-dairy vegan butter.

Pumpkin Spiced Apple Pie – already vegan! If only my pies would come out as nice as the photo, this is gorgeous! It’s time for pie thanks to Minimalist Baker for this recipe. You can also make my pie crust from this recipe.
