It’s zucchini season!!! One of the many things I love about summer is the fact there are so many different types of fresh produce changes. Right now we are right in the beginning of zucchini, corn, kale and tomato season. My father-in-law came home the other night with these gigantic zucchinis from a friends’ garden. He said we could have them since they don’t eat much fresh produce. Free, fresh produce – yes please! Then I got to thinking, if I have an abundance of zucchini in the house, then maybe others do too. So why not share some recipes to get the wheels moving on what to make with all the surplus of zucchini… Links to the recipes below with photos:
It’s easy to toss some sliced zucchini on the grill. Feel free to season with herbs of any kind such as dill or oregano and spray with a little coconut oil. It works wonders! (Also shown: seasoned tofu cubes, homemade bread topped with avocado slices) We eat this for any meal of the day.
Zucchini grilled on the BBQ is fantastic and then can go between two slices of bread. It’s perfect topped with some other grilled veggies and hummus. Perfect solution to not eating meat. mmm
Lemon Zucchini Bread – need I say more? I baked this the other day and it was gone fast! So delicious!
Zucchini Bread Oatmeal for breakfast anyone? We made this for breakfast today and it was just okay. We made it vegan, which isn’t hard. It has a reduced amount of sugar compared to other zucchini breads and baked oatmeal dishes. We are not big baked oatmeal fans but I know you are out there so have at it. Enjoy!
Baked Zucchini Chips – sounds strange but wonderful all at the same time. Great idea! I haven’t made this just yet but it’s on the menu. Anyone else try this yet?
Banana Zucchini Bread is like two loves combined – yum! We made this yesterday (photos coming soon) and have been drooling over it since then. We’re trying to resist the temptation because we are saving some for my in-laws. We would make this a million times.
Zucchini Pie – sounds a lot like a white zucchini pizza right?
Zucchini Falafel Balls. Sounds like it wouldn’t be that hard to add zucchini to just about any recipe – it just has a bit more moisture than normal.
Zucchini Pasta! This is something I ate the other day only I tossed things together. Basically you can just make your normal tomato sauce (warm if you aren’t raw vegan) and toss over zucchini strips. Yum!!!! It sounds gross but is delicious!!!!
There are so many recipes that you can create or recreate with zucchini. It does not have a strong flavor but does add nutrients. So delicious! What is your favorite zucchini recipe?
