Hello Genki Friends! It’s Monday again, are you all ready for a new week ahead of us? Genki Husband and I have a full week and we are thrilled to get back into the normal vacation/telecommuting schedule from the lake house. Today we managed to stay inside for most of the day minus a pup walk in the morning before the storms really hit Michigan. The thunderstorms were so hard at times it was hard to see across the lake thanks to the hard rain. Thankfully nothing serious happened so it was just a normal stuck inside type of day around here. Big Apple Bagel – poppy seed bagel. (Vegan)
Vegan Dark Chocolate Stash for a mid-morning snack: Lindt Black Current Dark Chocolate, Ikea dark chocolate, and the other one I can’t think of the name since we only purchase it sometimes from Whole Foods. It is really dark, dark chocolate and only Genki Husband will eat it. Sorry can’t think of the name.
Vegan Hot Dog from Trader Joe’s and an organic mixed green salad topped with corn and tomato. We just whipped this up since we were busy catching up on things.
As we were traveling over to my parents house for dinner we took along some California purchased bananas and some water. We always take along our own water since we find it easier than using water bottles from the store.
Vegan Stir-fry with Vegan sausage from Trader Joe’s. I took a ton of mini orange and yellow bell peppers, corn, broccoli and mixed frozen veggies and sauteed them for about 5 minutes together on the stove. Then I drizzle with a little soy sauce and that’s all. Sometimes you just have to let the vegetable flavors take over the dish instead of adding so many ingredients.
This is the same dish however I had some boiled pasta already for the other day and added it to the stir-fry for Genki Husband. (He was extra hungry.)
