Material Flower that bends around a staircase. My mother-in-law has this around her front entrance and it really cheers up the mood when coming into the house. It is a bit large but really puts that spring fever in the air when you walk through the entrance.
Happy Monday everyone! It’s hard to believe how fast the weekend turned into the next week isn’t it? We had such a nice Sunday it was hard to say goodbye but we were thankful when Monday came around the corner. Genki Husband and I did not manage to do much of anything that I could attach excitement too today but that’s okay. We managed to get a lot of work done at my in-laws (we are working while on this long vacation) so it was a beneficial day for both of us. The weather here in lower Michigan was a bit chilly again and rainy but that didn’t stop us from welcoming spring with some homemade bagels and opening up the “Florida room”. Here’s what we did in photos:
Genki Chocolate Chip Muffins. Fat-free (minus the chocolate chips – but you can add fruit instead)

Can you find what doesn’t belong?
Can you find what doesn’t belong? We found this on our morning pup walk.
Lunchtime! 1 Serving of Chickenless nuggets, salad with citrus dressing, 1/2 serving baked beans, fruit and some pretzels with peanut butter.
Yeast with water is the best smell in the world. All bubbly and ready to go. We made the dough from Artisan Bread in Five Minutes a Day and then went on to get the Florida Room open for spring.
Furry baby sleeping in the sunshine on her stand. Then we assured Genki Cat was taken care of by being entertained by the sunshine and birds.
The porch closed in for the winter months. We wanted to open it up for the spring while our bread was rising for the first time.
Florida Room open for the spring season. This is not an official “FL room” since it doesn’t have windows that close but it is really nice in the summer months.
Bagel dough has risen for the first time! It’s gorgeous and smells like a little New York Bagel Shop… mmmm
Dinner tonight- Quinoa Hippie Bowl. This is the easiest dinner you can make if you have a rice maker. Prepare the quinoa as normal but add 1/2 a bag of frozen mixed vegetables to it. Drizzle with soy sauce and nutritional yeast and ta-dah! You have dinner! It sounds super easy (which it is) but tastes creamy and healthy. Mmmm
What to do when cold in Michigan and you are a cat? Well, you simply find the heat vent in the kitchen on the cooking mat and settling down. Perfect! This is my mother-in-law’s cat.
Finally the bagels were finished and the house smelled so delicious! I’m guessing the neighbors were all gone otherwise they would be peering in begging for some too… yum!
We ended the day with a nice shared glass of wine between Genki Husband and I with some homemade popcorn.
