Many of you have noticed, I have been absent the last few days for our transition to moving. I’ll get into that more in the next few blogs though – look forward to a lot of photos in the coming future. For now though, I wanted to catch everyone up on what has been going on before the transition. As these photos were being taken, Genki Husband, Genki Furry Babies, and I were all boxing things up and prepping for our move. Meals were a bit sporadic but each one did assist in removing just about everything from our refrigerator and pantry. Other items not eaten were given away to friends and family so that waste was not done. So, this is what has been going on… in photos.
Spring temperatures have been a bit odd in 2014 so this Cold Season Tea is perfect for cold days.

Look out for Starbucks specials which after a purchase in the A.M. you get a free iced coffee in the P.M. Doesn’t happen often but it’s worth it if you live near a Starbucks and love coffee.
Blueberry Smoothie for a warm Virginia day. Frozen Organic Blueberries from the farm last Autumn with Vega Vanilla Protein Powder and a bit of Unsweetened Almond Milk. Perfect after a warm 5 mile run outside in the sunshine.
Justin’s Peanut Butter Cups (Dark Chocolate Only) are vegan! They do not taste 100% the same as the Reese’s brand that is popular in the USA but they are a healthy vegan alternative.

Korean Bean Paste Stew (Daenjang Chigae)- Veganized. Strange but I have not shared this recipe with you just yet, I should post soon.
Vegan Mac n Chez! This is made with nutritional yeast and contains no dairy or eggs. We have gotten into the habit of having Mac n Chez Fridays. nom nom nom We pretty much use a recipe on my pc and then switch it up here and there to our tastebuds. We have found that PPK online has a lovely recipe close to ours that works wonders! It is from this recipe but just skip down to the bottom of the blog post and use the “chez” topping over cooked pasta. Delish!
