Fast food for a fast food nation… My father is addicted to those breakfast bowls found in the frozen aisle of the grocery store, even through all of my nutritional guidance and nagging not to eat them. His particular brand contains around a months’ worth of fat, calories and sodium. Personally for me the frozen aisle is a good idea gone bad; what used to be parboiled vegetables to feed through the winter months has turned into preservative laden feasts. Yes some frozen vegetable and fruits are still healthy an option when fresh isn’t available but these frozen meals really are not are going to keep you from the doctor in later years. So I took it upon me to make a hearty, breakfast bowl similar to my father’s favorite brand and turn it vegan and healthy.
In less than 10 minutes I had recreated this breakfast bowl that had the same texture and taste, minus all the harmful ingredients and the addition of nutritional benefits. I believe the frozen breakfast option takes about 5 minutes then something has to be removed and another 5 minutes is required – so the time frame is around the same. There is a bit more to do for prep work but considering it might keep you out of a hospital in the future, isn’t it worth the extra effort? Oh come to think of it, buying the products in the fresh aisle does take a bit longer than just going to the frozen section so I guess making it homemade does take a bit longer. But again, the taste is better when fresh, so it’s really worth it.
All-in all, making a homemade version of this breakfast bowl was so simple to put together I’m not sure why anyone would want a limp, soggy breakfast from the frozen section of the grocery store. Making homemade does take a bit longer to purchase the ingredients but it probably goes to around the same price or less. Our version cost less than $5-10 to make enough for four servings. If you have some of the ingredients on hand already, it’s even cheaper per meal. Not bad! For us, the extra work was well worth the better tasting, nutrition-filled breakfast bowl. I sautéed the ingredients in two rounds so the individual flavors come out Here’s how we made it:1 recipe Vegan Tofu Scramble (Mock Eggs) Or 1 pkg extra-firm tofu, drained 1 tsp garlic powder 1 tsp onion powder ½ tsp turmeric powder 2 tsp low-sodium soy sauce, optional Salt and pepper, to taste
Sauté the tofu in an oil sprayed frying pan until it starts to get a bit dry and golden brown. Turn off the heat. Sprinkle with the other ingredients until well-mixed. If using, drizzle the soy sauce over the tofu. Stir until absorbed. Remove from pan and set aside.1-2 potatoes, cleaned and diced Vegan Ground Sausage, crumbled
Since the pan will already be hot, simple spray oil the frying pan again and toss in the diced potatoes and ground sausage. Fry until its golden brown and smells delicious. Your nose will know.
Mix the tofu scramble with the potatoes and sausage and ta-dah, instant breakfast bowl. Cheese on top is optional.
