Finally fruit is coming into view at our farmers market so we decided it was time to buy some expensive but fresh from the farm fruit.  Supposedly peaches and nectarines are very popular in our area to be grown but unfortunately the price hasn’t reduced at all from winter.  Maybe a bit early still?  But, thankfully we purchased a bag of nectarines and also a bag of plums.  Hence the hubby will be working earlier than normal tomorrow, I decided I would make some fresh fruit muffins so I wouldn’t have to make an entire batch at 4A.M. or so.  These are super easy to put together and taste sweet and tasty.  Yum!

Serves 12 muffins
6 Tbsp ground flax seeds
1/2 c water
1 fresh nectarine apple, chopped into small cubes
2 fresh plums, chopped into small cubes
1 c wheat bran
1 1/2 c non-enriched, unbleached flour
½ c whole wheat flour
2 tsp baking soda
1/2 c organic unrefined sugar
1 tsp salt
1 c unsweetened almond milk (or other nondairy milk)
1/3 c oil (or canola)
½ c raisins
 
Preheat oven to 350F/180C and prepare your muffin man. Mix all the dry ingredients into one large bowl.  Add the chopped fruit and raisins to get coated with the dry ingredient mixture.  Add all the wet ingredients.  Spoon the batter into the muffin liners and bake in oven for 20-25 minutes, or until an inserted toothpick comes out clean.  Enjoy!
