Temperatures have been above 100ºF here in my area this last week so serving something hot on the table really was not something I was looking forward to doing. DH brought home a cucumber from a coworkers’ garden so I decided to take some common ingredients most people have in the fridge and make a nice side dish or topping for a salad. We have espresso balsamic vinegar from a local supplier in our city but you can really use any type of balsamic vinegar

Serves 4
1 cucumber, quartered then sliced
¼ medium onion, quartered then sliced
1 large tomato or 1 cup cherry tomatoes, quartered
1-2 tbsp espresso balsamic vinegar (or regular)
1-2 tbsp extra virgin olive oil (optional but adds flavor)
5 basil leaves, torn into pieces

Place all the ingredients into a bowl and still well. This ages well in the refrigerator so if you have time, set to chill for about 1 hour or even overnight.

Serving: Serve alone or over a bed of lettuce.
