Breakfast is the first meal of the day and it should be celebrated but just not with too much sugar.  A lot of people have been posting delicious pancake photos made from protein powder but unfortunately all I have seen contained egg replacer from a box or egg whites.  The husband woke up extremely hungry so I decided I’d try to create something with protein powder and a banana.  The result raved of the recipe and said there was only one thing to change (which I have corrected in the below recipe).  So here’s something for you all to try, let me know how it works in your kitchen.  Yum!

*1/4 cup vegan protein powder (I used Raw Protein)
*1 banana (mashed until smooth)
*1 tsp almond extract
*3 Tbsp flaxseed meal
*1 Tbsp sugar or alternative
*1/4 c oat flour (yea, that’s just ground oats)
*1/4 c almond milk (or other nondairy milk)
*3-4 strawberries, sliced

Mix all together and make just like traditional pancakes.  Enjoy with or without maple syrup and vegan butter.  DH found it just wasn’t necessary.

Note:  These pancakes are a bit softer than traditional fluffy pancakes due to not having flour and egg.  The moisture from the strawberries also makes these mouth-watering pancakes a bit less solid.  So get your sturdy pancake flipper out and take it easy even though you may be tired when making these treats.
