Chia seeds are an addiction of mine right now, especially to make solid vegan pancakes.  Yum!  These little seeds contain a large amount of omega-3 fatty acids that make your skin, fair and nails grow shiny and healthy.  Not only that but they contain fiber, calcium and manganese (all for good health-especially athletes).  In our freezer I had some prepared pie crumble setting around so I decided to slice up an apple and make apple pie pancakes. Mmmm  We had ½ with crumble sprinkled on top and ½ without – both were delicious!  The taste of apple pie was spot on and could fool someone if the texture was more like a pie.  Nom nom nom

Apple Pie Protein Pancakes
Serves 2 hungry people
½ c oats, ground
¼ c chia seeds
½ c almond milk
¼ c protein powder
1 tsp vanilla extract
2 tsp cinnamon, ground
¼ tsp baking powder
Pinch of salt
1 small apple, diced
1 Tbsp sugar

Mix it all together in a bowl and make like traditional pancakes.

Note:  Our altitude may be a bit different than yours so you might want to adjust the nondairy milk accordingly.
