Today was both happy and sad at the same time. Our neighbors have a planned trip back to their home country for an entire month. Yea, they are going to be gone for an entire month! Neighbor man is having eye surgery back in his home country of Jordan (supposedly it’s much cheaper and he felt more comfortable doing it there) so they took a month sabbatical from their life in America. So it was “see ya later” for an entire month.

Early on I had a game plan of walking the pooch (if not too hot), working hard on writing an article, and then take the neighbors to the airport around 1pm. As with everything, things changed and I ended up watching this letter learning television show on PBS and playing with solar powered bunnies for about two-hours. Lol What non-parent plans for that ahead of time? ^_^ The neighbors took their luggage early to beat the lines at the airport so I got to play around for a while before getting into more serious things. Unfortunately it didn’t leave time to get any work done… then they informed me they were going to go to the airport later in the afternoon so I couldn’t assist them with a ride. I had plans with my husband so it just wasn’t possible. But, we still had our sad goodbyes and nervous neighbor unloaded all her yummy fresh fruits and nuts to our fridge since it would most definitely spoil after a month. No complaints here, I’ll always take delicious fresh ingredients.

After the sad afternoon, the king of the house and I were able to get out to the shops for a few things. The furry baby has been super hungry lately (probably due to the extra walking) so we picked up a large bag of organic natural ingredient filled dog food. It was actually three times her size – so hilarious watching her eyes bulge as she saw the giant bag. We also picked up some goodies at our local Big Lots food section. It’s always my challenge to save a little money since we purchase mostly organic all natural ingredients. Sometimes, not always, we can find some great deals on products that are commonly sold at Whole Foods Market and other popular health food stores. I love Whole Foods and wish we could purchase more from there, however it does get a little pricy after stocking up on everything needed. This trip we found some coconut water called Jamba and also CCO (I think that was the name). Both were made with 100% coconut water and some natural fruit and aloe. Yum! I’ll give reviews of both after we’ve tried both of them out after runs. If you haven’t had coconut water before after a long workout, I highly suggest it.

Finally for dinner we both agreed that cooking something on the stove really didn’t sound all that great. So we dug in our fridge and pulled out a few ingredients to make a cold chopped salad (without any lettuce, mind you) and to create another batch of dolmas (why not?). The dolmas are so incredibly easy to put together so that was given for a grain for our dinner meal.

Leftover Tofu Chopped Salad
2 c Kale, chopped
4 Radishes, diced
1/4 c onion, diced
1 lime, juiced
1 zucchini, diced
4 Roma tomatoes, diced
2-4 servings firm tofu, diced

½ tsp cumin
2-4 tbsp soy sauce
2 tbsp sake
Freshly cracked pepper, to taste

Toss it all together and grab a fork. Sounds simple but seriously it is… If you let the sauce marinate for a few hours, it tastes even better. Nom nom nom
