Pre-packaged products are not high on my list; I prefer to make everything from scratch even if it takes a long time to prepare. Lately we have been on the road though and making everything from scratch has been extremely difficult. Normally I would make Mediterranean lentil soup with my own mixture of lentils and spices. Thankfully though, I found this fantastic pre-made mixture that is easily obtained in a little plastic bag.

Bob’s Red Mill is a brand that offers whole grain mixtures and even offers gluten-free options. This mixture contains “green split peas, yellow split peas, barley, lentils and vegetable pasta (semolina wheat flour, dehydrated spinach and tomato)”. I added some more ingredients to add more nutrition to our full meal. Although next time I would add more spice to make the soup pop with flavor a little more, we absolutely loved the mixture. It doesn’t contain any soup spice package so if you are intending to make the soup, assure you have some spices in mind before you intend to make it. It’s a great cold weather instant soup. Yum!

My Added Ingredients:
4 c vegetable broth
2 c Bob’s Red Mill Lentil Mix
2 Zucchini, coarsely chopped
2 onion, coarsely chopped
5 garlic cloves, minced
Salt and pepper to taste

Make according to directions on the back of the package. Serves 4-6 It lasts in the fridge for about one-week.
