Constantly, I am reading of fellow bloggers making his and/or her nut butters, which makes me completely jealous. Yep, it’s not money, clothes, jewelry and etc that makes me jealous but rather their homemade nut butters. Just take a look at Edible Perspectives  amazingly creamy nut butters she’s always (and rightfully so) showcasing on her website. There are many other bloggers out there such as Holy Vegan Cow, Diet Dessert And Dogs and so on. Hence, with their constant success, I decided to be adventurous and make my own.

I toss together some ingredients that I had found as a common combination for most coconut almond nut butter. Here are the ingredients I used:

1 ½ c raw almonds
2c raw shredded coconut, unsweetened and dried
2 tbsp agave nectar
1½ tsp vanilla extract
4 tsp cinnamon
2 tsp coconut oil
¼ tsp salt

I roasted the almonds in the oven and then tossed everything in my trusty food processor. Other recipes normally give a range of around 20-25 minutes for processing with a creamy nut butter that you just want to dip your finger in and have a taste. Unfortunately my turnout was more than tragic. I ended up blending it for about 1 hour and still it was clumpy. I ended up adding more agave nectar to try and get more moisture into my dry, clumpy mixture but still no success. It was clumpy, hard and too dry to really spread that easily. I seriously almost cried…

The husband loved the nut butter but I have a feeling he was just trying not to hurt my feelings. Still after about a month, I have two baby food jars full of nut butter so it’s pretty much a clue. Haha Such a good hubby!

Anyone have some success making a nut butter in a general food processor?
