We have prepared meatless pepperoni crumble for our pizzas already, thanks to the recipe from The Complete Guide of Vegan Food Substitutions.  For some reason up until now though, we have not tried making homemade meatless crumble (mock ground beef) rather than purchasing highly processed types.  It’s kind of silly if you ask me, so this last week I decided to go ahead and try our own version on for a size.   Not only did it taste better than the store brand but it also saved us a ton of money.  It’s nice to have that bit of independence from processed foods.

Mock TVP Crumbles:
1 c TVP
1 c vegetable stock (or vegan “beef” broth if you can find it)
2 tbsp vegan Worcestershire sauce
1 tbsp soy sauce
1 tbsp ketchup or tomato paste
1 tbsp oil
1 tsp nutritional yeast
½ tsp paprika
½ tsp onion powder
¼ tsp pepper
1 tsp liquid smoke (optional)
 

Stir everything in a microwave bowl and cover with plastic wrap tightly.  Heat on high for 5-6 minutes.  Take out, remove plastic carefully (hot air will be released so be careful) and stir.
