Lately I have been getting tired of eating plain cinnamon oatmeal for breakfast, which gets old fast. In a desperate cry for something new for my taste buds, I went to the internet to look for something new. All I could scrounge up were tons of pancake and oatmeal recipes, neither sounding good at all. So, I went ahead and created this new recipe that has the fresh pumpkin purée as the highlight of the meal. Yum!
Serves 1 Hungry Pumpkin Eater
1 c pumpkin puree (I used fresh but you can use can too)
½ tsp pumpkin pie spice mix
¼ c oats, uncooked
2-5 walnut halves, chopped
1 tsp amaranth
1 tbsp flaxseed, optional
2 tbsp maple syrup or agave nectar
1 tbsp non-dairy whipping cream (optional)
1. Place the pumpkin purée and spice mix in a bowl and warm up in the microwave. Stir well.
2. Heat a frying pan on high heat. Spray with oil. Toss in the oats, walnuts and amaranth. Cover. Sauté until slightly golden brown or you can smell the oats cooked. Warning: It is essential to cover the frying pan because the amaranth will pop like popcorn.
3. Top the warm pumpkin puree mixture with the oat mixture.
4. Top with the maple syrup and non-dairy whipping cream. Enjoy!
