Is there anyone better than Susan over at Fat Free Vegan? I’m questioning if there is or isn’t. Her little one must be so thrilled to have a mum that makes all those wonderfully delicious meals each and everyday.
In our household we use a lot of her recipes as a base and then switch things up a little. If you have never been on the Fat Free Vegan Site, I highly suggest jumping over there some time. Her ideas are very simple and to the point, which is a great inspiration to run from the original and create some amazing dishes that match your taste buds. Each and every household has a pinch of difference so its always good to take and give to each recipe to make it your own.
A while back I came across Susan’s Tofu Omelet recipe. Unfortunately my omelet’s never fully come out as good as hers look, but the taste is always there waiting for the first bite. I love to use this revised recipe in a few different menu items such as English Breakfast Sandwiches and Mock Egg sandwiches.
Tofu Omelet Recipe
Serves 4
10oz tofu
1 tbsp almond milk
3 tbsp nutritional yeast
1 tbsp cornstarch
¼ tsp onion powder
¼ tsp garlic powder
¼ tsp turmeric
1. Whirl everything together in a food processor. You can use a blender but we have found it smooths the mixture faster in a food processor. Either works though.
2. Spray a frying pan. Spread out half of the mixture and make like you would a real omelet. Fill with whatever you like.
