Genki Kitty’s Sausage Hot Plate Recipe


Snow makes me irritable – there I said it! But then again, you will begin to notice that any cold weather that keeps me from the outside world makes me grouchy and a little on the negative side. So, this weekend when my husband asked what we should do for lunch – go out or stay in, I naturally asked to stay inside. The Midwestern states in the United States got a flurry of storms and the ground was covered with about two feet of snow. It was not the weather for me – I would prefer to hibernate, thanks.

So, we chose to just throw something together in the frying pan for a fast lunch in under 5 minutes. My hubster is trying to gain some much needed weight so he chose some leftover vegan sausages from Trader Joes (which we love!!!) Not only are the sausages vegan but they do have a slight spicy kick to them which is something of a rarity in the vegan sausage industry.

The lunch turned out to be a wonderful success! It was a little bit spicy and a lot o’ bit filling. We were going strong until dinnertime!

Our recipe:
1 vegan sausage, sliced
4 cherry tomatoes, quartered
1/2 cup baby bok choy, chopped (any green leafy veggie will do too)
½ c adzuki beans
2 garlic cloves, minced
2 tbsp onion, minced
2 tbsp nutritional yeast
½ tsp turmeric
2 tsp reduced sodium soy sauce

1. Prepare everything as suggested above before starting since it will only take a few minutes from start to finish once in the pan.
2. Preheat frying pan on high heat.
3. Spray with a little oil or place 1 tbsp water in it if watching your fat/calorie intake.
4. Sauté the onion, garlic and sausage all at the same time until brown.
5. Toss in the beans, bok choy, turmeric, and tomatoes. Once warmed through go on to next step.
6. Add yeast and soy sauce at same time. You will need the moisture from the soy sauce to mix in the yeast.
7. Serve with a little ground black pepper. Enjoy! ☆☆☆

I have been asked to put in nutritional values for this recipe.  I am reluctant to place it on here since some of the ingredients vary greatly such as vegan sausages.  I am putting the information up here for estimates only since I am not sure exactly what your ingredients will be – especially if you use non-vegan sausages.  The sausages that I used was around 250 calories each.  But, at least it will give you some idea.

    I’m not a vegan but that sure looks good. What is the total calories?

      The calories would depend on the ingredients you use. For instance, we have two different types of sausages with various amounts of calories. One has 50 calories while the other one has 270 calories. lol That is why I didn’t put the calorie count on recipe because it varies so often among vegan sausages – or animal meat ones if you prefer that type. The beauty of vegan food is that you don’t have to be vegan to eat vegan foods – it is basically healthy foods, just minus the animal. ^_^
